A particular cheese, special pronunciation ... it is not uncommon to hear the uninitiated about "cancoillotte" and insiders speak of "cancoi-yotte" or "Canco-yotte" depending on the region where they are coming. Our home is cancoi-yotte!
For 1 large jar of cream cheese (or 4 glass yoghurt pots)
250g metton
120 g milk
230 g of water
55 g butter half salt
1 or 2 cloves of garlic (optional) Place the bowl in the metton the thermomix and garlic and mix for 20 seconds speed 9. Watching metton consistency: must be reduced to a fine powder. If there are still chunks, mix again. Add the milk and water and heat for 10 minutes speed 3 to 80 °. Add the butter cut into small cubes and mix for 20 seconds speed 5. Pour the hot cream cheese in clean containers.
